I absolutely LOVE ice cream pies.  There are so many combinations that you can put together.  They are a quick to make and an upscale way to serve ice cream.  Make ahead and keep in the freezer for a delightful dessert.  Ingredients: 1 container Mint Chocolate Chip Ice Cream. My Grandma gave me a Kids Cook Microwave cookbook when I was 6 years old.  Our favorite recipe was a microwave brownie recipe.  We made it so many times the page is brown from cocoa.  You can make these brownies in under 10 minutes and the result is rich, chocolatey, moist brownies.  Ingredients:  1/2 cup butter 1 cup sugar 2 eggs 1 tsp vanilla extract 1/2 cup unsweetened cocoa 1/2 cup flour Directions:  Blend butter and sugar.
