I absolutely LOVE ice cream pies.  There are so many combinations that you can put together.  They are a quick to make and an upscale way to serve ice cream.  Make ahead and keep in the freezer for a delightful dessert.  Ingredients: 1 container Mint Chocolate Chip Ice Cream. My favorite is Tillamook. 1 jar Hot Fudge Topping 1 Oreo pie crust 10 Mint Patties or Andes Mints Directions: Warm up the hot fudge topping so it is runny. The Best Microwave Brownies

My Grandma gave me a Kids Cook Microwave cookbook when I was 6 years old.  Our favorite recipe was a microwave brownie recipe.  We made it so many times the page is brown from cocoa.  You can make these brownies in under 10 minutes and the result is rich, chocolatey, moist brownies.  Ingredients:  1/2 cup butter 1 cup sugar 2 eggs 1 tsp vanilla extract 1/2 cup unsweetened cocoa 1/2 cup flour Directions:  Blend butter and sugar. Peanut Butter Ritz Cookies

This is another cookie my grandma would make and brings me back to special time at her house whenever I eat them.  It's quick and simple to make with just 3 ingredients.   I like to use almond bark instead of white chocolate as it melts really easy and is much easier to work with than white chocolate.  You can find almond bark at Walmart or Amazon.   Ingredients:  Ritz crackers (2 rolls)  Almond Bark (1 package) / White chocolate Creamy Peanut Butter (about a cup) Directions:  Spread peanut butter on the unsalted side of the Ritz cracker.  Spread to edges, but...
